BUFFALO CHICKEN WINGS W/ BLUE CHEESE DIPPING SAUCE

SERVES   8


Wings

18 Chicken wings (about 3 lbs) 6 tb Butter or margarine
-disjointed w/ the tips discarded 2 tb Hot pepper sauce
Vegetable oil for frying
Blue Cheese Dipping Sauce
1/4 lb Blue cheese or Roquefort 1/2 c Mayonnaise
1/2 c Sour cream 1 tb Wine vinegar
1 tb Lemon juice Several dashes of hot pepper sauce to taste

WINGS
Melt butter in a small saucepan. Add hot sauce & remove from the
heat. In large frying pan or deep-fat fryer, heat 1" of oil to 375ø.
Fry wings in batches w/o crowding until golden brown, 12 1/2 minutes.
Drain on paper towels. Brush wings w/ spicy butter & serve warm w/
Blue Cheese dipping sauce. Hot pepper sauce may be varied up or down
depending on your taste and the brand of the sauce.

BLUE CHEESE DIPPING SAUCE
In small bowl, mash the blue cheese, leaving some small lumps. Whisk
in the mayonnaise until blended. Add the remaining ingredients &
whisk to blend well. Cover & refrigerate until serving time.

*This also makes a great blue cheese salad dressing. You can thin it out a bit with more mayo or sour cream if it's too thick for your taste.
