HALIBUT MACADAMIA

Serves 2

My wife and I went to Humphrie's La Jolla for dinner on my birthday and I had this great halibut dish.  As we were leaving, I saw the recipe on a card next to the mints.   Here it is. Enjoy.

2 Halibut fillets 6-oz 2 oz Shrimp stock
3 Eggs, beaten 2 oz Orange juice
2 oz Bread crumbs 1 1/2 tb Honey
4 oz Flour 1 oz Soft butter
2 oz Macadamia nuts, crushed 2 tb Raisins
2 oz Dark Rum 1 tb Fresh chives, chopped

Mix bread crumbs and macadamia nuts together. Dredge halibut fillets first in flour, second in beaten eggs and third in breadcrumb-nut mixture. Saute in heated saute pan in melted butter until brown on both sides, approx. 2 minutes. Place in pie pan and finish baking in 350 deg. oven approx 6 minutes. Deglaze small saute pan with rum, add stock, orange juice and honey. Reduce by 3/4, then take off heat. Add raisins and wisk in butter. Ladle sauce over fish and garnish with chives.

Use 10-in saute pan and 7-in saute pan
