Hawaiian Spareribs |
Serves 4 |

3 lb Meaty pork spareribs | 1/4 c Celery, thinly sliced |
Salt and Pepper to taste | 2 tb Margarine, pork fat or butter |
1/4 c Onion, chopped | 1 tb Cornstarch |
2 1/2 c Pineapple chunks | 1/4 c Vinegar |
1/4 c Green bell pepper cut into 1/2 inch squares | 1 tb Cornstarch |
1 tb Soy sauce | |

Arrange spareribs meaty-side
up in shallow pan. Salt and pepper lightly. Roast in 400 deg oven for 30
min. Saute onion, celery and green pepper in margarine or pork fat for 5 minutes. Sprinkle with cornstarch. Stir in 1 cup syrup from pineapple chunks, and cook, stirring until transparent. Add vinegar, soy sauce and pineapple chunks. Pour off fat from roasting pan. Pour pineapple and liquid over meat. Reduce heat to 350 degree, and cook about 45 minutes or until done, basting with liquid in pan.
